I remember the exact moment. Tuesday morning, quarter past seven, eggs in the pan, my youngest pulling himself up on the counter to watch me cook. I dragged the spatula slowly across the centre of the pan, and there they were. Tiny dark specks of coating, curled up off the surface and sitting in the eggs.

Why "PFAS-Free" Is Not the Answer You Think It Is

Here is what most cookware brands would rather you did not sit with. "PFAS-free" describes what a coating does not contain on the day it is made. It says nothing about what happens to that coating two years later.

When a nonstick coating degrades, from heat, from scratching, from ordinary daily use, it does not announce itself. It comes away in particles too small to see. The label on the box cannot protect you from that, because the label is describing the factory, not your frying pan on a Tuesday morning after four hundred breakfasts.

This is the trap in every coating-based pan, whatever it is made of: PTFE, PFOA, ceramic, or the newest "PFAS alternative" someone in marketing named last year. They are all coatings. A coating sits on top of something. And anything that sits on top of something can eventually come off.

The problem was never one specific chemical. The problem is that there is a coating at all.

There is a version of this story the industry keeps repeating: remove one chemical, rename the replacement, and hope nobody asks what happens when that coating wears out too. PFOA gets phased out. PTFE gets rebranded. "PFAS-free ceramic" arrives, and within a year the reviews fill with the same complaint: rough, sticky, chipping.

Let's Be Honest About Nonstick vs a Bare Metal Pan

Is a coating-free pan as slippery as a brand-new nonstick on day one? No, and any brand that tells you otherwise is not being straight with you.

The obvious question: if there is no coating, why doesn't food weld itself to the surface?

The release comes from a fine micro-texture worked into the titanium itself, pressed into the metal rather than laid on top of it. Food sits only on the high points, while a thin film of oil settles into the channels between them. Less contact, less sticking. And because the texture is part of the solid metal, it cannot chip, peel or wear away. There is nothing on top to degrade.

One honest note, because most of these articles skip it: this is not a "no oil, ever" pan, and any brand that promises that is not being straight with you.
